Aunt Houria’s cooked carrot salad

This unusual spicy carrot salad is flavoured with crushed caraway seeds and a teaspoonful of Harissa paste, mixed into the carrots with a good slash of pure virgin olive oil. It s very easy to make and can be kept in the freezer so it’s well worth making big quantities to save for another day. in Tunisia we decorate it with capers and tuna but just black olives is nice too.
